On-The-Go Breakfast (VEGAN friendly)
I have always been a breakfast person. I wake-up thinking about what I am going to make to start my day off right. I really like to make HUGE oatmeal bowls (have been for over a year…haha) or eggs and toast on the odd day. Though sometimes I wake up early for work and don’t want to make a lot of noise or create a smell in the house while my family sleeps. Lately I have been making a nutrient packed smoothie that I can just take out of the freezer the night before – or the day of.
I like to prep my smoothies a little prior to the night before. That why I can take it out of the freezer at night and place it in the fridge to defrost overnight. Or if I don’t plan on drinking it first thing in the morning, I will just leave it in the freezer and take it to go in the morning and wait until it has defrosted a little before digging in!
I like to add coffee to my smoothie as well – this saves me from spending money, gives me extra time to sleep and gives me more time on my way to work. I don’t drink coffee everyday though, only the days I know it is going to be a rough morning or late night at work!
The smoothie I have been making recently consists of lots of healthy fats, protein and vegetables – which helps aids in hormone signalling – and keeps my energy up through the work day:
- 1/2 banana
- handful of blueberries
- handful of spinach
- steamed & frozen cauliflower
- 1 cup of black coffee
- serving of plain greek yogurt OR sometimes I will add protein powder that is plant based and offers 20g of protein per scoop
- Justin's almond butter
- matcha powder or collagen (sometimes)
- coconut water OR nut milk
- topped with Manitoba Harvest hemp seeds
